Although the Montilla-Moriles appellation is mostly known for its fortified and sweet wines, this is completely different. This cuvée is rather a dry wine aged with a veil of yeasts, but with no alcohol addition like you would see in a Sherry, for example. Composed of Pedro Ximenez, king varietal of the region, it presents a delicate oxidative touch that will surely please fans of the genre. Pair with grilled sesame-tuna tataki.
